Homemade Graham Crackers

Why make homemade graham crackers?

I know you can just go buy graham crackers from the store but once you try these you won’t want to!

Storebought graham crackers are bland and boring and contain all sorts of extra unnecessary questionable ingredients.

These graham crackers are delicious, crispy, and perfectly spiced with a minimal ingredient list! They are incredible by themselves or when used to make s’mores or ice cream sandwiches. One of my local ice cream shops sells a key lime pie ice cream that is PERFECT for pairing with these. You can also turn them into the most delicious graham crumbs ever by blitzing them in a food processor.

What do I need to make them?

Here’s your grocery list:

-Salted Butter

-Brown sugar

-Honey

-Ground Cinnamon

-Salt

-Baking Soda

-All Purpose Flour

You will also need a kitchen scale or measuring cups & spoons (but I highly recommend the scale!) , a stand or handheld mixer (or a bowl and a wooden spoon and some arm strength!), a small bowl, a spatula, a whisk, a baking sheet, parchment paper, a rolling pin, and a rolling cutter or sharp paring knife or a cookie cutter to cut them into your desired shapes.

Tips & Tricks:

Your graham crackers will have to hang out in the fridge for an hour or so before you bake them, so plan accordingly!

These are pretty straightforward to make, but you do need to roll out the dough. I like to roll out the dough before I refrigerate it because I find it easier to roll this way. However, if you’ve softened your butter too much and your dough is kind of sticky you might find it easier to roll out your dough after you’ve refrigerated it. It’s up to you! Choose your own adventure.
When making these into graham cracker shapes, you can either use a cookie cutter for perfectly uniform crackers, or you can cut them by hand. I cut mine by hand for these photos using a rolling cutter and I like the rustic look it gives, but I’ve also cut them with round or square cookie cutters before and loved the results from that too. I like the ones with fluted edges, it makes your crackers look fancy!

Homemade Graham Crackers

You'll never want to go back to storebought after trying these homemade graham crackers! These delicious, crispy, cinnamony crackers are perfect for s'mores or ice cream sandwiches.

Ingredients

Instructions

  1. Whisk together flour, baking soda, salt, and cinnamon in small bowl.
  2. Cream together butter, brown sugar, and honey in the bowl of a stand mixer fitted with the paddle attachment. Scrape down and mix again as needed until mixture is fully combined.
  3. Add flour mixture to mixer and mix on low until just combined.
  4. Roll out dough to approimately ¼” thick and cut out crackers with 2.5” fluted square or circle cookie cutter or a pasta/pastry wheel.
  5. Place crackers in an airtight container, dusting flour between each layer or laying parchment paper between each layer. Refrigerate for 1 hour or overnight.
  6. Preheat your oven to 350 F.
  7. Place crackers on baking tray lined with parchment and poke each with a fork 2-3 times. They won't spread much so you only have to leave a couple cm of space between each.
  8. Bake at 350 F for 7-10 minutes, until crackers are starting to brown at the edges and are set in the middle.

Notes

I highly recommend using weights when baking for the most accurate results, but cup & teaspoon measures are provided for those who don't have a kitchen scale.
